What would a New Year’s menu be without truffle? You will find it here both in a sublime focaccia and scrambled egg amuse-bouche and in the mashed potatoes served with the beef. Seafood has not been forgotten, with refreshing gravlax salmon and beetroot sorbet, as well as surprising seared scallops enhanced with an orange supreme. Of course, rum could not be absent from this festive menu, and the specialist cellars of our Bar 1802 supplied the key ingredient for the superb rum baba served with ice cream. When it comes to drinks, timeless Taittinger champagne will accompany delightful discoveries such as this red wine from the Gard, Pays des Cévennes, a blend of Merlot-Cabernet and Syrah, and, in white, this Loire wine with beautifully fruity citrus notes.
