At the heart of the Hôtel Monte Cristo, Bar 1802—the world’s largest rum bar—invites you this summer on a multisensory journey with its “Matières” menu.

The initial ambition? To refocus on the setting—the venue itself—and highlight the materials that make up this unique space. The result: a bold menu, cocktails inspired by raw materials, and tastings that celebrate rum in all its richness.

 

12 Materials, 12 Cocktails to Explore the Taste of the Place

Conceived by Donovan Chouari and Paul-Antoine Herbet, the 1802 menu pays tribute to the materials found in the bar’s decor: porcelain, wood, terracotta, leather, metal...

Twelve materials for twelve creations featuring the finest sugarcane-based spirits from around the world—vintage, spiced, and unique expressions designed to appeal to both connoisseurs and newcomers alike. Names include Rum Flor de Caña, Matusalem, Paranubes, Doorly’s... not to mention Bar 1802’s own exclusive vintage: a limited-edition Rhum Caroni crafted specifically for the Parisian venue.

Ingredients are meticulously sourced, with house-made infusions, cordials, and syrups, and mixology techniques that flirt with chemistry: lacto-fermentation, Binchotan infusion, carbonation…

The goal: To capture the taste of the material. A meticulous and experimental approach, elevated by a touch of irreverence—breaking away from convention, sparking curiosity, and surprising the palate.
